As the New Year begins, I get the feeling that I used to get when a I was a young schoolgirl on the first day of a brand new school year; full of excitement, anticipation and enthusiasm for the the year ahead. My books all freshly covered and colour co-ordinated with bold stencilled writing on the outside, and crisp white pages inside, just waiting to be filled with words of learning and lengthy mathematical calculations. Pencils are sharpened and ready, tucked away into a shiny new pencil case. Everything neatly in it’s place. I loved school, yes, I say it unashamedly, was one of those! I debated with teachers, I questioned everything, sometimes taking the other point of view, just for fun, to challenge and see how far I could push the revered learned ones. Oh how they must have dreaded seeing my hand raised yet again! “But, Mrs Teacher, why ……!”.
I feel the same way now at the beginning of the year as an adult, as we start our year at Ginger & Lime. This is a fresh blank slate full of possibilities; the last year is history and we move forward from here. I am excited to see what is to come this year, including some fabulous travel plans for food research in place already. India in April with a Wellness retreat is foremost on my mind as the most different & exciting one. I will definitely be spending some time in the kitchens there, and keen to learn more on the health benefits of the Auyuvedic cuisine and work on finding the perfect balance for complex curries. We have a huge amount of requests from you to follow a healthier eating and lifestyle plan, & we are ready to assist you in doing this. We will of course still indulge in our love for duck fat and butter, as balance is the key to all things.
I am looking at doing some collaborations with exciting new chefs too, as well as having our favourite regulars, like Liam Tomlin, back to play in the kitchen. We also welcome feedback from you guys as to what else you would like to learn; any cuisines that we are not covering that are on your radar? Please do let us know.
Our team are all so excited for the opening of Salt & Sage with Kim Jordan in Bantry Bay. This has been a work in progress for some time now, and Kim is full of enthusiasm and raring to go. Many of you all remember that Kim worked with us here for 2 years, and then decided to hone her skills at Chef’s School, which she did with flying colours. You can be sure of some super creative menus coming from her for Salt & Sage.
